While less famous than Pinot Grigio, Pinot Bianco is also a grape worth knowing. Its skin is brighter than Pinot Grigio, and its character is elegant and discrete. It is subtle and interesting, and at the nose you get white stone fruit, like an unripe peach, mountain herbs like dandelion, wormwood, and chamomile. Some fresh sweet spices, a note of minerality and almonds give complexity to the finish. I chose this one from Visintini because, other than being an excellent representation of Pinot Bianco, it is particularly balanced and smooth while remaining crisp.
Grape: Pinot Bianco
Pairing: Pair it with a cheese fondue, or prosciutto and cantaloupe, a butternut squash soup, or fish appetizers.
Good also with a chicken breast salad.
