This is one of the best Italian white wines, and one which completely upends the reputation of Italian whites as simple, fresh and easy to drink. Instead, Nova Domus is dry and fruity, mineral and structured, well balanced, intense and persistent.
At the nose, stone fruits and passion fruit, balsamic pine trees with a hint of wet volcanic stone, sage and mountain herbs. At the palate it is balanced between the fruit aromas and the sapidity coming from the quartz-sandy soil. It is long and with a creamy texture. Very enjoyable.
All the wines of the Terlano sub-appellation are organic.
Grapes: Pinot Bianco, Chardonnay, Sauvignon Blanc
Pairing: I like it with all kinds of fish, from scallops to shrimp, tuna to salmon. Its structure makes it also good with all kinds of birds, with a special nod to duck breast or tagliatelle with (tomato-less) duck ragù.

Terlano is a tiny village in Alto Adige, the northeastern part of Italy at the Austrian border. Its rocky soil is made of porphyry and quartz, a very special blend that leads to marvelous white wines. This appellation is limited to white wine based on Chardonnay or Sauvignon Blanc or, in smaller percentages, Pinot Bianco.
