A crystal-clear white wine with a very complex bouquet of scents: there is an attack of white peaches and wet stones and sea iodine typical of the Etna minerality; then figs, cantaloupe, acacia honey, apples, paprika, Mediterranean herbs, capers and sage.
On the palate it is dry, smooth and crisp, with a balanced and harmonious finish featuring both minerality and dry fruits.
Grapes: Carricante, Catarratto
Pairing: A very flexible white wine. It is great with fish, from raw sashimi to fried fish and chips, all the way to oven-baked branzino in white wine sauce. Great also with a chicken salad, or a white pizza.
