A quaint old village south of Torino and north of Genova gives the name to this white wine, which is an alternative to Pinot Grigio. Gavi is a light wine made with Cortese grape – easy to drink, but with a personality all of its own. Fruity and white flowers at the nose are followed by acacia honey and warm notes of dry hay. The explicit minerality is another typical character of Gavi. At the palate, it is intense and balanced with a surprising finish of ripe mango.

Pairing: Crostini with liver patè, or black olive mousse, or butter and anchovies. Great also with a white pizza (no tomato sauce) or all the Mediterranean seafood pastas.
