The Font du Vent Cuvée Tradition is one of the Chateauneuf du Pape I like the most because while keeping the density and the structure of the appellation, it is also fresh and elegant. At the nose, we get immediately the blackcurrant, the balsamic note of eucalyptus, sage and dark dried roses. At the palate, it is crisp with elegant tannins and is smooth, persistent and intense. A great wine.
Grapes: Grenache Rouge, Syrah, Mourvèdre, other indigenous grapes
Pairing: I like to open this wine 3-4 hours before drinking it when possible. It needs succulent and warm food, like stewed beef with mashed potatoes, lamb and black kale soups. Vegetarian options to taste it include eggplant parmigiana, beet gnocchi with white cabbage stewed leaves, and fontina fondue.
