This cuvée Etienne Gonnet is the single vineyard version of the Font du Vent Cuvée Tradition that we also have in this wine list. It is bold and at the same time surprisingly elegant. Smooth at the palate, it is more balanced and persistent with a longer, complex finish. As in the Cuvée Tradition, we have blackcurrant, the balsamic note of eucalyptus, sage and dark dried roses; the Etienne Gonnet also adds dates, more spiciness , dry herbs like thyme and cistus, a note of ink and a seductive recurrent scent of dark roses.
Grapes: Grenache Rouge, Syrah, Mourvèdre
Pairing: I like to open this wine 4-6 hours before drinking it when possible. It needs succulent and warm food: a T-bone steak or a rack of lamb with creamy spinaches, or ravioli with meat sauce. Vegetarian options to taste it include eggplant parmigiana, beet gnocchi with white cabbage stewed leaves, and fontina fondue.
