As in many other historical wine regions, Chianti Classico producers can be divided in traditionalist and modernist. The modernist tend to use for aging more new small barrels (225 liters) than large and old barrels (from 1,000 to 20,000 liters). Castello della Paneretta can be defined an organic modernist.

The result is a Chianti Classico, very modern in style and not so typical, but in this case, for the best. It is smoother than many others, balanced, with vanilla and ripe red fruit notes. The scent of iris and violets is in the start as in the finish, which is also enriched by notes of pine trees and fresh Mediterranean herbs. Very enjoyable.

Grapes: Sangiovese, Canaiolo

Pairing: Risotto with sausage and radicchio, beef filet with mushroom sauté, pizza margherita, tagliatelle with ragù.

Appellation: Chianti Classico Riserva DOCG, Italy
It is in the central part of the larger Chianti DOCG denomination. It is a relatively small area between Firenze and Siena, mainly around the villages of Gadda, Gaiole, Radda, and Castellina in Chianti. It is very similar to the area first recognized by Cosimo III de’ Medici, Grand Duke of Tuscany, in 1716, as the best area for producing Chianti.
