Like for Cedro, Cedro Riserva’s organic grapes come from the 20+ year old vines in the Rufina area of Fattoria Lavacchio, north of Florence.
Riserva means aged one more year than the normal Cedro. And to make a Riserva, winemakers usually use the ripest grape clusters. The combination of these higher quality berries and the added aging makes this Cedro Riserva more elegant and bolder than the younger version of Cedro. It is more garnet in color and a little more complex, with the addition of iron and leather notes to the fruity, floral and spicy flavors of Cedro. In the mouth, the texture is rounder and longer in the finish. A great example of an excellent everyday wine.

Pairing: Pheasant, hare, rabbit; eggplant parmigiana, but also aged dry cheeses.
Appellation: Chianti Rufina Riserva DOCG, Italy
The Rufina DOCG sub-zone is at the northernmost part of the denomination Chianti DOCG, mainly north-east of Florence, close to Montefiesole. The soil and the micro-climate make this Chianti particularly smooth and elegant.
