Pieropan makes Soave Classico in two different crus: La Rocca and Calvarino. The only difference is the soil and the microclimate of the respective hills. I have chosen Calvarino because I think it is more interesting – but we’ll surely also feature La Rocca down the line for a special comparison game.
At the nose the wine is complex, with citrus and dandelion, saffron and green apple, and some chalk notes. At the palate it is fresh, crisp and warm in the throat, smooth enough yet refreshing.
