Spirito Libero means “free spirit”, as the wine is free of added sulfites. During the fermentation process in winemaking, the generation of sulfites is a natural process, but usually other sulfites are added to “stabilize the wine”. In this case, winemaker Mario Pelosi decided not to add any sulfites and to reveal on the label of each vintage the number of milligrams of naturally occurring sulfites.
A ruby Sangiovese with no added sulfites, Spirito Libero is complex at the nose, with ripe morello cherries, potpourri, a hint of flint and herbaceous notes. At the palate it is crisp, moderately tannic and balanced.
Very typical of the Maremma region, southwest of Florence, this wine is an everyday choice for meat eaters.
