Compared to its cousin Sancerre Les Comtesses, the Silex version of the Sancerre from Paul Thomas is more explicit in the minerality to the point that it gives a feeling of fizziness. The flint note comes at the nose before the white peach, acacia, apricot, and candied pear. The personality is acute but educated, rounded by the length and intensity of the fruit note. It is very, very typical of the areas of Sancerre at the eastern border of the Loire Valley. Personally, I like it. But as most of these very unique and interesting wines, you’re either gonna love ‘em or hate ‘em.

Pairing: Oysters, oysters, oysters and all the clams and shellfish. Fish with sauces or the paella de mariscos.
