This bottle is actually pretty powerful for being a Chablis: at the nose, notes of white peach, unripe pineapple, limestone and clay, crème brulée and a hint of almond at the end. At the palate it is warm, balanced and smooth, yet with the typical personality of the limestone soil. To me it is an excellent example of an elegant Chardonnay.
Grape: Chardonnay
Pairing: The winemaker suggests it with any type of food. I think it is a little too generous, but I understand why. The wine is not only good as an aperitif or with fish and fish soups, but it can also be paired with chicken or grilled pork chops, salumi and salads.
Appellation: Chablis AOC, France
Chablis AOC is at the northwestern tip of the Burgundy wine region, and it is an excellent and elegant appellation in general, where Chardonnay grapes grow with a precise and linear minerality that’s even more accentuated than in the rest of the Burgundy region.
