Corvina is a little-known grape typical only of the Garda Lake region, between Lombardy and Veneto.
Contrary to the way it is vinified as the main grape of Amarone (resting four months on nets to lose water content before being pressed), Corvina is here vinified “in a normal way”.
It means that is harvested in late September and then immediately pressed and fermented in stainless steel. This lead to a wine that is dry, crisp, elegant and long at the finish. Intense ruby color, at the nose it’s fruity with notes of cherries, blackberries and plums together with hints of cinnamon and pepper. Soft and round at the palate, it is medium bodied and savory with fine acidity, the hallmarks of the Morainic soil of the Custoza wine region.

Pairing: Red meats, roasted or raw, matured cheeses, but also lasagna Bolognese, pizza pepperoni and anything with red sauce. Serving temperature: 16-18° C.
