A white Tuscan wine made with the classy and innovative approach of Gaia Gaja and her family in the Ca’ Marcanda estate. The separate fermentation of the three grapes creates a complexity characterized by scents of linden flowers, acacia, musk and a balsamic note of mint, followed by stone fruit, saffron and a mineral nuance of flint. In the mouth it is crisp, and the complexity re-emerges to create an angular, adventurous texture in the finish.
Grapes: Vermentino, Viognier, Fiano
Pairing: Any salad with salmon, tuna, or chicken, but great as well with linguine alle vongole, or a roasted monkfish.
