This specific cru of Soave, Monte Carbonare, is one of the best expressions of Soave. It is made on a volcanic black soil, and the minerality of this wine is what makes it unique and special. It is not too sapid though: it is balanced, medium to full bodied with structure and warmth. Ripe white peaches, honey and freesia, jasmin and saffron: all these scents are well integrated with the smell of wet black stone. At the palate it is intense, warm, persistent and long.
Pairing: It’s very versatile. I like it as aperitif, but also with crostini and smoked swordfish or tuna, pasta cacio e pepe or seafood pasta. Great with grilled wild king salmon and rapini.
