This is a surprisingly bold, dry, fruity-yet-fresh white wine. Great score/price value, it expresses floral notes of honeysuckle, yellow violets and stone fruits such as peaches and ripe apples.
The Mistral wind blowing from the Pyrenees ripens the grapes keeping them dry and healty. Hyper-maceration helps extract the sandiness of the soil.
I particularly like its complex finish with fresh almonds, as well as its structure, which helps with pairings.
Grapes: Viogner, Marsanne, Picpoul, Barboulenc, Ugni Blanc, Clarette
Pairing: I prefer it with food, so if you have it as aperitif, you want to add snacks, like smoked salmon crostini. You can enjoy it with halibut Hawaiian-style (meaning with spices and ripe tropical fruits) or with a Dover sole with butter-sage dressing.
