This sparkling wine made with the Ancestrale method competes with high-end Champagne and the very best Italian Metodo Classico. It is golden with straw yellow hues and limpid. The bubble are very fine, not so numerous (as an Ancestrale should be) and persistent.
It is a structured sparkling wine with a complex harmony of scents: ripe exotic fruits like pinapple and mango, spices like saffron and paprika; acacia honey and a sapid note of limestone. At the taste it is dry (in the ancestral method wine-makers don’t add sugar or any dosage), long and persistent, smooth yet fresh, elegant, refined and precise.

Grapes: Chardonnay, Fiano Minutolo
Pairing: It’s a wonderful start for any kind of party or dinner. Great with sea urchins, caviar, tuna tartare, oysters. It can accompany the whole meal if one prefers not to change wine during dinner.
